Tonight I made another batch of Lazy Cabbage Casserole ... this stuff is good and makes five serves for me, so I think it will be a staple for awhile. Last night I had burgers ... I thought a cheeseburger sounded good, so I bought some extra trim beef patties and put two on to cook while I made a simple salad using a bag of mixed salad leaves and some thinly sliced cucumber. When the burgers were cooked I put a small amount of Kraft LiveFree cheese on them and let it melt. Then I put the burgers on the salad. I topped the burgers with 1 tsp each of low-fat mayo, no-added-sugar ketchup and yellow mustard. With each bite I made sure to get some salad on the fork as well, and I must say they were very good. Didn't miss the buns at all.
Today was father's day in Australia, so we had a family barbecue to go to. Hubby assured me there would be some sort of steak and salad, so I wouldn't need to bring anything. The steak was a bit tough and chewy, and the salad had cheese and chunks of blood orange and avocado in it, so I picked out just some lettuce and spinach, and just a few slivers of bell pepper because they were red. I'm only supposed to be eating green ones right now in phase one, but I didn't want them to think I was having steak and nothing else! That little bit of salad made it look more like a meal.
I politely declined the pasta, bread rolls and dessert with no explanation. They don't know I'm on the diet yet ... I was vegan for six years and they never quite knew what to serve me, so I didn't want them to think they were once again having to figure out what I would eat. Next time I won't listen to hubby and will just bring a dish I know I can have. Anyway, that's my week two report. I've still been walking 30 minutes nearly every day, and may try to increase that this week. I wish I was a morning person as I would love to get the walk out of the way before work. As it is I'm just trying very hard to get out of work on time so I can go before dinner. Wish me luck in the coming week.
